If the money is pounds sterling, then it is legal tender over the UK.
Scottish money is acceptable at most stores, I know, I've worked for three different companies and taken it without problem.
Irish money was different though, as the pund (sp?) had a different value to the pound.
But that is irrelavant now that the Irish use Euros.
As for Northern Ireland, I'm not 100% certain, but if the currency is Pounds Sterling I would have thought it would be accepted.
