I am some kind of freak?
Just got everyone's Overdrives on full and let him have it. Cast Haste and Slow straight away, used 2 missiles from Cid. Easy.

I did, and my Tidus, Auron and Kimahri are very powerful now.

I think the Breath Of Fire method os when your firt 3 die the people on the back move forward and attack. I'm sure my other characters would have eventually knocked off 50 (maybe)

Also, how doy uo do all the chocobo stuff? I know it's somewhere in the calm lands but where exactly? All I can see is a bloke who says "Follow me to go to whatever".
Method 1) Celestial Weapons:
First off, the Celestial Mirror -
The Celestial Mirror is an adapted version of the Cloudy Mirror, transformed using a glowing rock in Macalania forest. You'll find this rock in the same place as you find the small boy when you are re-uniting the family near the forest entrance.
To get the cloudy mirror you need to go to the Calm Lands and train a chocobo. Once you have passed the first test, you can jump on the chocobo feather (found in the South East of the Calm Lands) up to the Remiem temple. Once at the Remiem temple, you must win the chocobo race to gain different items, including the cloudy mirror.
Once you have converted the cloudy mirror into the celestial mirror, you will be able to obtain the celestial weapons. However, at first, the weapons only have the "No AP" ability. For the weapons to work properly, you will also need a crest and a sigil to go with them. When the weapon is working perfectly, it has superb abilities such as "Break Damage Limit", "Triple Overdrive" and depending on the character, others such as "Double AP", "One MP Cost" and various "Counter" moves.
The most important Celestial Weapon is Wakka's -
Wakka - World Champion:
Simply return to the bar in Luca, and if you have placed third or higher in a League or Tournament, you will be presented with the World Champion.
Wakka - Jupiter Crest:
This is found in the locker room of the Aurochs back in Luca.
Wakka - Jupiter Sigil:
A little time consuming, but well worth it thanks to the superb attack reels. Once you have won a few blitzball Leagues and Tournaments you will obtain Wakka's overdrive modes such as status reels. Once you have the aurochs reels, at the end of the current League you have a 50/50 chance of getting the Jupiter Sigil as the prize in the next League (so its worth saving just before the end).
Method 2) Defeat Dark Aeons. They give away armour and weapons with decent abilites. After a while, you should get one for Wakka. It`ll allow you to go over 9,999, but it won`t be quite as cool as the celestial weapon. For example, no triple overdrive, no effect on the aeons etc...
Method 3) The final method is actually not too bad. If you capture five of every single monster in the game, you can go to the monster arena guy and he`ll give you 99 Dark Matter. You can use these to customise one of your weapons so that it has Break Damage Limit - be warned though, there are better uses for Dark Matter, in particular the Ribbon attribute.
Anyway, I hope one of those methods helps!
The other decent attack is Anima's Oblivion. The other advantage with using this is that if you get hit by Omega's biggest attack, you`ll be sacrificing the aeon to keep the party alive, which is worth it as its game over otherwise.
How many hit points does this nasty chap need to beat him? It is a pain because apart from Bahamut the most damage I can do is a double cast of Ultima which only does 19998 damage each time.
Any hints or should I not tackle him till later?
> Hmm.. see your point, but I'd have to re-start to do that.
Nah, don`t worry - just do it from now on. The AP you get during the first half of the game counts for virtually nothing. 1000 fights on Besaid Island earn less AP than a single fight later on. Just try and use each one from now on, and they`ll soon get their levels up.

If its that easy, then they probably aren`t getting much AP either - it`ll be best to move on to a new section and get going.

Surely only one character would have died when they attacked, leaving two standing. Its not ideal for the AP collection, but sometimes for really tough battles, you may have to leave a character KO'd.
A very useful character to have active in this battle is Rikku. Even if she isn`t very powerful, her "use" ability will come in very handy (or if you are on the advanced sphere grid, anybody could have it). Basically, use "use" to use :D the Al Bhed potions. They add a nice lot of HP to each character, as well as getting rid of certain nasty side effects. You should have plenty from the fights in the Sanubia Desert, so using a few shouldn`t be a problem.
Basically, in the fights you are doing on the airship, use the aeons, and use boost. This will fill their overdrive bars nicely. Once they are full, try and fill the character overdrives as well. Then go into battle, use the overdrives, and Evrae won`t stand a chance - particularly as losing an aeon won`t hurt your party too much. Added to Rikku's Al Bhed potions, you can`t go wrong.
