I just thought I'd give you my impressions as a newbie to Morrowind.
Ok, setup my character as a Dark elf, make a new character class: vagabond (thief who is a blend of warrior/light magic skills/stealth.
Proceeded to steal everything not nailed down within the beardy's and roman looking dudes house. Get the healing ring: don't give it back (nah nah, nah nah nah). Talk to a few people. Go and buy armour in shop and sell a few stolen items. Wander of to the left of shop and begin killing crabs and little land-lamphrey looking things (eww!)
Actually decide to follow the orders I've been given as I know noone and this will likely get me rest and money. Get to that town via insect transport. Wander round big place, had fun whilst getting lost.
Join thieve guild.
Join that cult/religious thingy
Get orders.
Go on errand for fighters guild guy to help get info.
(Oh so much I've missed out. Like getting attacked by a nutter on a bridge and running away.)
Went to find these ruins on orders and got attacked by a weird grey thingy outside a city/village. Defend myself. When a guard came to help me I got arrested (?!?!?!).
Get out of prison. One skill has gone down. Walkout and get killed by a big green lizardy thing I couldn't hurt with my 30/30 magical javelin. Scary.
Go back to save point. Quit. Coming back to later today.
Currently am a Thief, following a few order for money and pretending to be religious (already sold the reigious book I got to pay for Javelin!)
Summary: YAY, YAY and thrice YAY!!!!!
Each effect which occurs twice or more in the ingredients will become an effect of the potion.
e.g, suppose one ingredient has "Restore Health" and "Drain Fatigue", and another has "Fortify Luck" and "Restore Health". Creating a potion by mixing these two will result in a potion which restores health.
The strength of the potion is determined primarily by your alchemy apparatus, but also by your alchemy skill, and to a lesser extent your intelligence. Your alchemy skill also affects the chances of a potion being created successfully, and which effects of ingreditents you 'know' - you won't see all four effects of an ingredient until your alchemy skill is around 60 or so.
The four different pieces of alchemy apparatus all do different things. The Pestle & Mortar is all that's needed to create a potion, but using the others too will make your potions 'better'. One increases positive effects, one decreases negative effects, etc. I can't remember which does which now.

Oh that's simple, you just kill everyone.
I don't really understand the alchemy process, how can you tell which traits of the ingredients will be used? And do you need all 4 bits of equipment and what does each od them do?
Petty Soul Gem
Common Soul Gem
Lesser Soul Gem
Greater Soul Gem
Grand Soul Gem
And some creatures only fit into certain ones. E.g Scamps only fit in Greater Soul Gems. So its best to carry a load of em around.

To create a customised enchanted item, you need two things:
1) An item to enchant
2) A soul gem containing the soul of a creature.
One you have both of the above, you can create a customised enchanted item by either doing it yourself (drag the soul gem onto your character in the inventory window to start the process) or by visiting an enchanter, such as the wizard upstairs in the Balmora mages guild.
The abilities of your to-be-created enchanted item are dependant on a number of things...
Firstly, the types of spells & effects you can have are limited by the spells you possess. If you don't have any form of spell which does 'fire damage' for example, you cannot have your enchanted item do fire damage without first buying a fire damage spell.
Secondly, The more powerful the effect (e.g, greater damage on a fire damage spell) the more expensive the item will be in terms of both cost to produce (unless you are making it yourself, which is free but unlikely to work) and charges used up on each use of the item. The item you are enchanting has a maximum number of charges per use, which thereby determines the upper limit of the power of enchantments on that item.
The total number of charges that will be available to your newly enchanted item depends on the soul gem you used to create the item. A soul gem from a rat will contain 10 charges, while one from a skeleton champion would contain something like 200. More powerful creatures generally have stronger souls. Charges will slowly replenish over time, depending on how high your enchant skill is.
To capture creatures' souls in soul gems, you need to cast a soul trap spell on the creature before killing it. You can do this with a soul trap spell, a soul trap scroll, or (the easiest way) by having 'soul trap' as a 'cast when strikes' enchantment on your favourite weapon.
