They were good fights.
Probably depends at what tme of day you watch them at too, as an evening's entertainment they probably would have seemed rubbish. As early afternoon movies they were great.

True, but he did have his head stuck in the sand. However, why he didn't fly before falling off I don't know (perhaps it was just to stay and make sure he was with Threepio, but unlikely).

R2 flying seems to be quite a lot slower than a projectile saber - perhaps the element of surprise would be taken away by a large astromech gliding towards the captives.

I think this one is the easiest to answer as I can't imagine the kind of jet engines R2 seemed to have working all that well under water/in mud.
I'm biased as I'm a bit of a fan of the Star Wars movies, but on the R2 flying point, I think they did a little homework before they let it happen. I can't imagine that many people not spotting something so obvious. There may be some room for argument, but there don't seem to be any situations where R2 *had* to fly.
