Just saw a Simpsons episode with a red lobster and after asking several people it seems a lot of people think all lobsters are red, they even think shrimp are too (well pinky) and crabs (the only red crabs i've seen are the tiny ones that move in their millions)

Lobsters come in a variety of colors besides the usual blue-green (their shells only turn red when they are boiled), including blue, yellow, red, and white. Some even come in two colors, having half of their shell one color and the other half a totally different color.

Such pointless trivia.

could they chop your fingers off with one pinch, and are they like crabs - i.e. do they grow back limbs that have been cut off?

At wickford Aquatics (place of work) I have seen various lobsters - harldy ever see the gigantic red ones though.
Mostly bluey orange lobsters... One time I thought it had died because I saw it lying on the side of a fish take all dry - then I picked it up and realised it had just shed its skin

Deep inside them is a pigment called astaxanthin. When boiled, the pigment seperates and returns to it's natural color, which is, bright red.

Actually, many species of lobster ARE naturally red, especially deep-water species, the same goes for shrimp, which vary from deep red to completely transparent.
