My second's in awesome but not in great
My third is in mother but not seen in dad
My fourth is in sunny but never in sad
My fifth is a vowel found in water not creek
My sixth is found only in one day of the week
My seventh's two of three that you learn when you're young
My eighth's not in song but it's there when it's sung
My ninth's in eleven and twelve, not thirteen
My tenth is in island and river, not stream
My eleventh's in precious and secret and paste
My twelfth is in phantom and spectre and haste
My whole stalks the night in a quiet dreamlike state
With no memories the next day of being out late

heh, very clever.
Got about the first 4 of these stages then my head hurt, i forgot where I was, and gave up!
Sorry be being so ambiguous:
It only takes nine minutes to time Top Score's boiling from the minute you start.
First, flip both hourglasses over and start boiling Top Score. When the four minute timer runs out, flip it again. When the seven minute timer runs out, flip it over. The egg has been cooking seven minutes.
Now when the four minute timer runs out again (after eight minutes) flip the seven minute timer back over. Since the seven minute timer has been running only a minute between flips, there's a minute worth of sand left. And when that minute runs out, Top Score will have been cooking for exactly nine minutes.
When the four one runs out turn it over
start boiling when the seven one runs out
then turn the four one over twice more

You never said that originally
*sulks*

time 4 mins leaving 3 mins on the seven min timer
time 3 mins with the rest of the seven min timer leaving 1min omn the 4 min timer
time 1 min with the 4 min timer to leave 6mins on the seven min timer
time 4mins with the 4min timer leaving 2 mins on the seven min timer (2mins from the six you had left).
time 2 mins with the seven min timer leaving 2 mins on the four min timer.
2mins + 7 mins = 9mins
therefore it took you 14 mins

because the host has knowledge that you do not.
For him, the chance of each box containing whatever is either 1 or 0.
Unless you are saying 'how many times should each sandglass be used?' in which that's a different question.
