So, I decided after looking at this thread, it needed editing.
Morrowind discussion, discuss about Morrowind.
Pretty straight forward really.
Tell us your Morrowind storys, cool stuff you've done ect.
"The illuminated order, dragons, giants, playing as a skeleton, cloaks, improved gameworld ambience, etc...." Maybe it's time I invested in a decent PC.
On the subject of new inclusions in Morrowind: I'd like to see a "magic carpet" - kind of a permanant levitation/flying device. When used the appearance of the gameworld would transform into a magical haze, similar to when Frodo puts the Ring on. Just a little thing I'd like to see.
The Xbox architecture can't support Morrowind's plugin style. It's either all in the same game, or it isn't. Hence you won't get plugins. The nearest you'll get is GoTY edition which will have Tribunal & Bloodmoon built in.
Here's a list of the PC-only plugins I currently have loaded.
Weathered signs:
All signposts become legiable, instead of having to focus on them for several seconds first.
Passive wildlife
Non-diseased animals become less likely to attack you. Why would they, when they're likely to get killed?
area effect arrows
New arrows, with new effects in radius.
bscounds
More realistic bg sounds, adds atmosphere and suspense.
masterindex
Adds a quest for all the propylon indexes.
lefemm armour
Armour customised to fit female races.
inscription
Adds a bew skill to the game governing the creation of magical scrolls
giants_dragons
Adds dragons to the game. They are tough!
skeleton
Allows a skeleton to be one of the starting playable races.
mw_advanced
Adjusts levelled creature lists - essentially makes the game much more challenging for high level (15-20+) characters.
persuasion_response
More interesting responses to the 'persuasion' option.
siege_firemoth
A series of new quests against an army of undead.
herbalism
Adds some realism to the collecting of herbs feature.
giants
Totally overhauls creaturs lists - now they are dependant on day/night as well as character level, etc. Occasionally, you will meet 'gaints'...
fatiue_effects
You can no longer run when fatigue runs out. Nor can you breathe underwater when it runs out. Makes things a litte more realistic.
cloak_collection
Adds hoods and cloks as wearable items. Excellent mod.
thief_exp_overhaull
Changes the way security and locks work... and so much more.
levelling
Prevents 'power-levelling'. Levels are now more governed by skill increases than player choices.
dodge_mod
Adds a sanctuary bonus to unarmoured chars, makes fighting without amour more viable.
armor_effects
Adds sneak penalty for med/hvy armour
nightime_doorlocks
People now lock their doors at night.
wetaher_hurts
Entering an ash-storm (or something similar) with no preotection will now give you cumulative health penalties.
AV_fem_***
Female armour set.
primary_needs_2.6
Characters now must eat/drink sleep every few hours, or else face attribute penalties which will eventually be lethal. A nice touch of realism.
Illuminated_order_v1.0
An entire new faction with associated set of highly original quests. These involve vampires, werewolves, necromancy, etc. Just the sort of guild you wish the main game had, but didn't.
These are just the mods I have loaded, There are many, many more out there.

I've only been to vivec once, I climbed a huge tower like building, went inside, and made my way down to the sewers where I was attacked by a stupid ghost thing. Is vivec full of huge buildings like that? I hope not.
I'm currently skulking round some place with houses that look like they are made out of elephants tusks. Stealing stuff rocks, til you get gripped
