The best way I know is trapping the souls of creatures in soulgems.
Get soulgems, a soultrap weapon or spell, and an enchanted item which can summons an easy-to-kill lesser creature like a scamp.

I've got a Dwarven Crossbow. Attack 30 - 30.

I *think* the Demon Longbow was from the Mages Guild in Ald Ruhn, in a locked closet.

Anyone know what the best bow in the game is? Seeing as I've just started again I've only got the crappy one from Seyda Neen. And the game is too big for me to remember where the others were.

My mates have got them, But fail to tell me where they are.
I heard you need 100% Magic Resistance to actually use them anyway :S
