As you know you'd lose.

I would bet you £10 that, at some point in the game, the character you control will be transported through the air by a bird or legendary beast of some kind.
Not that I'm going to; that would be silly.
We've already seen how Wind Waker was set after Hyrule had been sunk to trap Ganon, but failed.
My idea is that the giant forests do grow from the Deku trees etc which were planted and/or spreading.
When these forests become large enough they may absorb large portions of the water and make the soil more capable of holding large bodies of water, returning Hyrule to a state we have seen in previosu games (please- I want the luscious Hyrule we laid eyes on for moments in WW ;) )
The gods may also reallow Hyrule to become a proper kingdom and surface, with Ganon once more dead/banished.
We have also experienced that Link is the Hero of Time. What if an ancestor of the Princess Zelda he knew summoned him using the powers of the now religious-relic style Ocarina of Time, or he was once more sent into a sleep/time travel/time warp which places him into a future hyrule (not futuristic, just further on in time to what he knew), to counter a new foe, or perhaps another character possessed, maybe even by Ganon.
Thus the horse could well be Catherine, and the Link the adult Link we knew from Ocarina, having grown again before being whisked off to the future. That would explain his obvious excellence with the Master Sword and skill of Horsemanship.
If Nintendo wanted to delve even further in making a big Zelda-History continuation, we may even discover that the new adversary is in fact the Link, Hero of the Winds, having been possessed by Ganon or some other power whilst travelling the unknown after the end of the events of Zelda: The Wind Waker.
Thats my idea.
I just want the game now ;)

It maybe.. but your original guess at a winged beast was for the main method of travelling as none had been revealed. I'd be put money on that, now we've seen Epona-lookalike, there isn't another completely different way of getting around Nintendo have yet to reveal.
I'm a betting man. Care to put money on it Ash?
What's to say flight couldn't also be included?
