Zombie tend not to understand the use of tools so a knife would be virtually useless to a zombie, lets face it, a zombie would much rather eat with it's hands rather than use a knife and fork...
If the knives are large (no mention of size in original scenario) then the zombie should be dispatched with relative ease leaving the only real debate - who would win between the cowboy and the pirate.
A website dedicated to cowboys says "Most of their fights was not with their fists or guns. It was in the saddle, riding under the hot broiling prairie sun". I think without the use of the trusty colt and a lasso then the advantage is with the pirate whos main focus in life is to kill and plunder...

Of course you can kill a zombie with a knife. It might take a fair bit of hacking, but it's do-able. My only concern for the pirate would be his cockiness - he could leave himself open for attack. I'd imagine that the cowboy and pirate would work together to destroy the zombie, and when the zombie was fading the pirate would probably turn on the cowboy. On most ocassions the pirate would then go on to destroy the zombie, but it he starts thinking about pieces of eight and the fullness of his beard, he could be in trouble.
