You've touched on something there, kiddo.
The fundamental problem with Buffy and Angel: the makers feel a need to have a fight in every episode. Some episodes seem to have a demon in them just so that they can have a fight scene at the climax. The episodes The Body and Superstar come to mind, episodes that had demons who existed solely as cannon fodder, and made no real sense. Even Storyteller didn't need all the fights in the school, they were just a waste of time.
Imagine, if you will, gentle viewer, what it would be like if The Sopranos needed a shoot-out in every episode etc. Twould be a bit lame.
We especially didn't need the two small kids turning into a big demon in Gingerbread, although that episode was still brilliant and hilarious and excellent etc.
