I've just relised I don't really understand this when they refer to a 'shoot', does that mean its real or also mean an 'angle'????

Shoot promos can be planned or part of the script like Paul Heyman's promo with Vince McMahon. It can also mean 'real' amateur style wrestling done on professional shows.

A 'shoot' is when a wrestler breaks the script and says or does what he wants.
A 'work' is when something is scripted, and can be made to look like a work. (e.g. many have thought that the Austin situation is not a 'shoot', but a 'work' - a planned thing leading to a storyline).
An 'angle' is a storyline, part of the script.
