I'm on that level, It begins with A (I cannot remember how to spell it) The one with the landmines. Anyway, Back to the point, I have come to this checkpoint where I enter a really steamy/foggy room that has meat everywhere and stuff. What do I do from here? Its really difficult to look around when there is smoke bellowing my view.
Any more help needed just ask :)

unfortunately I dont think we'll ever get a perfect stealth game. Its just wat too difficult. Sorry, I cant be bothered to explain the obvious. I'm tired but can't sleep. urgh.
But then, it isn't the aim of the MGS games to skulk in the shadows - they take a different approach. But your shadow and wet footprints could give you away. With Splinter Cell, I had a guy look right at my shadow in a doorway yesterday, and nothing happened.
I've actually noticed a number of AI flaws and omissions in SC, just as with MGS1/2 - but fortunately, none of them spoil any of the games. Each has positive and negative points which balance them out. Neither is perfect, and it'll still be a while before we get the perfect stealth-based game, I reckon.
On a purely pedantic 'fun' level, stuffing people in lockers still gives MGS2 the edge for me. :-) Other than that, I personally can't choose between them. Equally superb, for different reasons.
No. I can remember shooting out any lights. If I did it held little significance and didn't hide me.
In MGS you were found if you stepped into the CONE vission the guards have. Splinter Cells whole game structure is based on Lighting, so its doesn't just look pretty, its the whole foundation of the game.
