But there was still no need for the "You know" at the end of every other line.

Exactly, that too. It's like the writers of the script actually intended to make to the player want to feed the disc into a shredder.

That was annoying where they all say ''YA???'' At the end of a sentence.
The lack of a explorable world-map like other FFs really did let it down massively. The whole game was extremely linear, with not much sense of exploration or freedom - it was just "get to Zanarkand" and that was the whole game.
Voice acting ... yeah, pretty crap. But it was the first time for a FF game - although why they always have to use whiney, irritating American husks is beyond me. Auron and Wakka were pretty good, though. Actual character in the voices, rather than someone just repeating their lines.

Yeah the acting was pretty appalling. Is it just me, or did the characters have some kind of obsession with saying "you know" at the end of virtually every line? Especially Rikku (who is probably the most annoying videogame character ever).

Yeah outside of the battles things were very much simplified. Remember how great it was to go exploring the world map in FF7? Theres none of that in X. Most of it is just simply running to a red dot on the map and watching lengthy cut-scenes when you reach it.
That said, the stunning visuals and battles were enough to save it I think.
