I dont have MK64 so ive been playing SMK, so far my best time is 1:15:53.

No, DK Jnr and Bowser are the fastest in the game, the shortcut can only be done using these characters.

The way ive done it is to use the cable that came with my gamecube to run my snes straight into my VCR. I then press the input button on my remote and record at my leisure.

So far, that's proved to be impossible.

It is Mario raceway. I think the track is on the GBA version, but i doubt they will accept it, it probably runs faster than the original. You could get away with an emulated version though.
