This is indeed very strange. There are many other things like this, I'll find the link to them.
It's all about how the different parts of your brain function together. I think this one is to do with:
One part of your brain tries to read the words.
Another part of your brain tries to recognise the letters in those words.
Because OF is such a short word, the second part of the brain does nnot have enought time to 'check if there are any F's in it' or something.

Damn that is weird!
I read it throught three times, and... I missed all the "of's" each time.
And yes, I think examining each letter by letter is cheating as you're not attempted to process individual words and analyse them, which is where the discrepany creeps in.
Still, it's very interesting. Where did you get this, er-no?
