the best way to compare 'em is to race tyhe same tracks with similar car. So get a copy of each, and race the monaco track in F1 2001 and the cote d'azur track in GT3 with a polyphony car.
I'd have to plump for GT£, the gfx in GT3 are better, as is the gameplay, and range of cars/race types. But the F1 cars are better simulated in F1 2001 (obviously) compared to the ones in gt3, and the increase in mecahnical grip with speed is best in F1. But you are limited to F1 races, if limited is the word.
