I think the Eyetoy is a great idea in theory, and in practice it's quite fun after a night out or if you want something a bit different, but there are so many more possibilities.
If Sony had allowed the camera to zoom then you could have your whole body on screen instead of just your upper half. This would open up a world of new things to do;

Sure, Eyetoy Groove is fun with all those licenced songs, but what you really want is to see your whole body on the screen, legs flying all over the place and arms waving like a monkey on steroids. Just imagine having to provide accurate movements to the Cheeky Girls song or doing the Timewarp and being marked out of 10.

Yeah, you can beat up a robot on the eyetoy, but how about going against a real boxer in the ring and being able to move your whole body around? Go up against Tyson (watch your ears), Bruno in a pantomine costume and many others. You could even try kick-boxing and if you're in to hugging big sweaty men, you could try wrestling.

All these ideas suck because of simplet thing - the eyetoy would be crap for anything other than an arcade style game
They should have yourself in a football game, it would be so good, no? And, it would be a preferable form of exercise, sprinting on the spot to get into the box for that all crucial header :p
I reckon a decent Star wars game, with lightsabre hack n slash action! I've had a go on a similar ninja type arcade game before with a sword - great fun, even if you look like a muppet!

could have made the eyetoy portable with a little memory, then u could of use it like a camara, but there could be a game that went with this or features in games that turns videos and images into computer graphics and enviornments, u could then play in these enviornments in your games, for example, your room as your starting base in GTA or your local playing field for a england international.
this would also alow great likeneses for games like THUG, and maybe even full body modals of your mates for characters in games.
of course if the people or image was in close proximetry to your PS2 and eyetoy, it wouldent need memory and some of these ideas could happen.
