From what I've seen, Baloon Trip could be brilliant and probably uses the DS' abilities the most.

Super Mario 64 x4 - I'm liking the look of this. It shows of the visual capabilities of the DS well, and the 4-player feature looks good, although it wasn't displayed properly. Doesn't make the most of innovation in what is shown, but hopefully it will at some points later on in the game.
Wario Ware DS - This looks like it could make very good use of the touch screen features. A very short clip, but it shows what it needs to: the pure comic genius of Wario Ware, and how well the touch screen could be implemented.
Metroid Prime: Hunters - Actually, scratch what I said earlier about Mario 64 x4 showing the visual capabilities. This shows what the DS is capable of. Gamecube graphics. And a Gamecube game boasting some of the best graphics too. Again, just a map as the second screen feature, but still, that will help.
I'll update as I watch new ones.
