Sony entered the scene with their own little console the Playstaion. Due to Sony's massive marketing campaign, they introduced gaming to a whole new audience, the casual gamer.
No longer were people buying games for sheer enjoyment but for the sake of buying games.
A prime example is Nintendo, they produce a game of their own every couple of months and 9/10 times it's good. But because of Sony churning out mediocre games every week, Nintendo have had to rush many of their own games just to compeat with Sony. Sega have paid the price, who knows maybe Nintendo is next and that just leaves Sony and Microsoft, two of the worlds richest companies continuing to make ok games for the sake of making games.

The point about for every good PSone game there are 10 bad

I agree. I mean their consoles were never that great anyway. Master system was nevr as good as NES. Mega drive probably was better than SNES I suppose but the there's Saturn....ahem. I have a Dreamcast but there are not enough top class games. Shenmue, Soul Calibur and MSR. There are a few more but I really can't be bothered to go into them. In my opinion N64 is better.

The fact is that where they could only sell games to their own hardware customers, they are now targetting ALL formats! Surely this is a good thing for them (LOADS more money- they are the biggest 3rd party developer in the world by a LONG way!), and customers get to play their games on different consoles!

Yeah but MGS2 isn't out yet and neither is the other one you said. ZOE is pretty good I guess but Summoner isn't great.
And if you think of Perfect Dark 2, well Sony really will have to make something special to beat that.
