Without mentioning Halo...
PGR2
Jet Set Radio Future
Crimson Skies
Ninja Gaiden
Star Wars: KOTOR
Morrowind
Sega GT2002
OutRun 2
ESPN NHL Hockey
Splinter Cell
Splinter Cell: Pandora Tomorrow (although, have to confess I STILL don't own it)
XIII
At this point I'll stop. That's a dozen that are more than decent. See, even in single player I found Rainbow Six 3, Ghost Recon et al to be decent, because they kept me interested and occupied for at least a few hours. Not great single player games, but at least decent. The ones I mentioned above are really good. Then there are others that I've never played, such as Gladius or Psi-Ops which are meant to be really good as well.
Now you might not have played all of those, because that is what you said, played. But there you go, if you haven't played them or got them you now have suggestions for more games.
But I'm not that fickle. I got rid of my cube after I hadn't played it for 6/7 months. Not after 1.
Then again I did ditch Burnout 3 after 2 weeks and SWB after a day but that's because they were shallow and uninteresting. :P
My Nintendo love(tm) was all about the Rare. :D
I'd rather be playing something quirky like Phantom Crash than Zelda no.345 although I'm happy to play online shooter no.345.
Personal taste (and an addiction to quirky* games and online multiplayer goodness) :)
*and I mean detailed quirky games not simple ones like Pikmin.
Still, it's opinion.
Resident Evil is a clunky experience I don't want to repeat, thankfully Silent Hill's making the genre more fun and less irritating.
MGS should really just be left to die as it's been surpassed by many a stealth licence now.

I'm not talking about 3rd party offerings though (I can't imagine where you can get the 30 figure from, but anyway...). I'm looking for the quality 1st party games that we expect from Nintendo and supposedly are the reason most people buy Nintendo consoles.
I can count on 2 hands the amount of games that have come from Nintendo this generation that I'd consider to be up to their high standards.
Pikmin
Pikmin 2
Mario Sunshine
Smash Bros Melee
Zelda : Wind Waker
Eternal Darkness
Then you've got the games that others obviously rave about but I don't see the big deal in...
Paper Mario 2
Metroid Prime
Metroid Prime 2
Now from where I'm standing 9 quality game from suposedly one of the greatest game creators ever, is not exactly what I'd call an impressive line-up.
I'm not saying that Xbox has been exactly sh=t yourself amazing all the time, but the Cube has just been 1 big disspointment after another. EVen the games that I have enjoyed from Nintendo, I wouldn't call them better than any of the big titles on N64.
It's no wonder they're failing...
The thing is, the 3rd party support for the Xbox is far better than the Cube so when there is a lack of 1st rate titles I grab something like Psi-Ops which feels like a first rate exclusive title. Then when a decent exclusive comes along, like Ninja Gaiden/Dead or Alive Online/Riddick it usually keeps my interest for bloody ages. I haven't played more exclusive titles on my Xbox however the ones I have played have lasted ages and proved to be far more interesting than those on offer for the Cube.
Then with the US PS2, nothing comes close for RPG's and for the Western stuff Metal Gear and Devil May Cry again offer far more than what the Cube does as far as my interests go.
Horses for courses I guess. Have to agree though, the Resident Evil series is fantastic. Massive fan.
There are at least 30 games worth playing on Cube, each of them are excellent.
The only reason I have an XBox is Live, and the prospect of CT, and the fun of H2 online.
