Christmas - because no one actually knows when Jesus was born, so they don't bother. Also, they work on the basis that if Jesus actually wanted us to celebrate his birth, he would have told us all to do it, like he did whenever he mentioned anything else that he wanted people to do. Also a lot of people who have a faint understanding of things realize that Christmas has pagan origins, so they try and stay away from any of that pagan stuff.
Birthdays - well it's almost the same as celebrating Christmas isn't it, only replacing Jesus' birthday with your own. Again, they see no point. And to some degree they're right; there isn't any point at all.
Thanksgiving, I have no idea on, because I don't actually realize what thanksgiving is about. I'm guessing it's something to do with being patriotic as an American. In the Bible, it says something along the lines of "be no part of the world" or something, and JW's believe that’s in terms of not getting involved in politics, being patriotic, etc.
That's only from memory from about 2 years ago, but if memory serves me well, that's pretty much why.
