My choice would undoubtedly be Claudio Ranieri.
The man is excellent. I can't praise him enough for his approach to interviews and press conferences etc.
Quite possibly one of the nicest, and most polite managers in the game.

That was the match I was at against Boro, the interview with him was on the screen in the executive lounge after the game. Whole place cracked up.
We should dedicate this thread to him and his classic quotes.
