Yes, as you've pointed out, originality is a strong thing on Gamecube, and the games I play the most are probably some of the most innovative games around. I still enjoy Pikmin, Super Monkey Ball 2 and Super Mario Sunshine. The first two completely original titles, and Mario also with some very involving new features - maybe it isn't complete innovation, but it's partly there, and is still a brilliant game anyway.
Meanwhile, game franchises like Mario Kart, F-Zero and Zelda are things I like as well. Mario Kart and F-Zero especially, seeing as I'm a big fan of racing games, and the Nintendo Difference on these certainly elevates them to higher heights than most other racers around.
But the one thing that really swings the Gamecube in my direction is the multiplayer. There are some brilliant multiplayer games on Xbox as well, I have to admit, but I've got TimeSplitters 2, Mario Kart: Double Dash!!, Conflict: Desert Storm, Super Monkey Ball 2 and Pro Evo 2 (on Jap import), and I have to say, that is all I really need.

Depends what kind of games you like really. I've tried some of the GC's top games, like Metroid Prime and F-Zero, but I just didn't find them interesting at all. I do appreciate the originality of most GC games, and that is the consoles strongest area in my opinion, but I just can't seem to stay interested in them enough.
Personally I prefer my X-Box because I like my FPS's and racers; there's a load of quality FPS's and PGR2 is brilliant. And now that GTA has made it's way over as well, that just seals the deal.
