For long periods out of a frdge eggs can start to incubate. You may find than when you open the egg it will have blood in it. This means it is safe to keep it in a fridge, unless you plan on using the egg withing half a day.

The eggs are not stored in a refrigerated bit and I've been told never to leave them in 'the chill' because a reaction occurs inside the eggs that makes them go bad or something.
