Yeah, been there twice but that was enough unless I suddenly have a family and take the kids there.
Right first up, make sure you get yourself out to NASA, it's on the East coast and well worth the trip, if your lucky you might get to see a shuttle launch. Make sure you do the coach trip round the site, get to see the VAB, crawler and launch pads, really cool. Also make sure you get a look at the IMAX theatre, it'll blow you away....fantastic!
Depending on where your staying, make sure you do Universal Studios (if only for T2 - 3D), MGM Studios (Indian Jones - Raiders of the lost Ark), Disneyland (depends on how old you are) and also the Epcot Centre. If you goto Epcot make sure you are prepared to stay until about 9pm as they do a laser, foutain and firework display. May sound cack but it's spectacular!
There's loads to do there, you could spend a month there and not see half of it.....try and get down to Miami and the everglades, the airboat trips round the glades are supposed to be a great experience.
Bush Gardens is another attraction, not as well known as say DisneyWorld etc but loads of rollercoasters and rides.
Just one thing I'll say, try not to get lost in Tampa as the going into the wrong area is certainly a bit worrying.
Have a good trip and enjoy yourself.

About the food there it's mostly chain resturants so you will probably see more than 1 of the same resturant, most of them serve steaks, big and juicy. They also re-fill your drinks for free! and in McDonalds they let you get your own drinks but you just buy the size cup you want, and that you can also re-fill.
