Hey, I was making a few general assumptions that a usually true with multi-format games but was corrected. That's not ignoring you, is it?
Also, I've read time and time again that the GameCube can infact push more polygons than the PS2, on numerous official and unofficial websites. Sure, the likes of GT3 may have impressive polygon counts, but no doubt when the GameCube's pushed to it's limits it will be able to better it.
Anyway, the differences are so marginal, it barely matters. It all comes down to which controller you prefer! And there might be a price difference.
Graphically there will be little difference, with maybe the XBox being the better of the 3. Framerate wise the XBox version may also be better as nearly ever XBox game supports the 60Hz mode and at fullscreen. While the PS2 doesnt use the 60Hz option much, or even fullscreen. GC will probably have 60Hz as most other GC games support 60Hz, but not fullscreen as the GC normally has boarders on games.
I did hear that the XBox was suppose to have an exclusive mode over the other 2, but this may not be true anymore.

You're really starting to sound like a fan boy. Everything that you say compliments the Gamecube, even when it something bad like Rare leaving, you'd say you wouldn't care.

If you're concerned about getting the 'prettiest' version, then check out all of the final versions in-store before buying.
The PS2 version looks highly impressive and runs at 60fps (or 50 here in the UK), and you can't actually get any slicker than that.
From the latest video on the magazine coverdiscs, all that was missing from the original PS2 game and incorporated on the Gamecube version (reflections on car bodies etc.) has now been put into this new incarnartion. (Remember, the original PS2 version was rushed to meet a deadline, hence it had a few features missing - such as DD5.1 sound).
Graphics are also likely to be more detailed on the PS2 version than the GC, as the machine pushes more polys - though the GC version might have a few extra lighting effect; not that it really matters, because you won't have tme to admire it anyway!
Loading times are likely to be irrelevant. The first game took no time at all to load.
Having said all that... after becoming bored of the first game relatively quickly, it's not a game I personally will be buying on any platform.
