well anyway, before I do, I want to know what i've done wrong in my current site, and how i can improve it. any suggestions, good things, bad things, mistakes etc, please post here:

Yeah, much more professional, but I'd drop the bezel a bit on the text, some looks cool but thats a bit too much in my opinion.
You have far too much content on your pages. As I understand, you are advertising a service, you're not going to grab people's attention by swamping them with lots of text, you have basically an essay on each page. And when its not broken up by any kind of visual aids and your descriptions get somewhat technical and confusing to the average person then you're not doing yourself any favours by giving in depth discussions of what you do. You should keep it simple and focused. If you really want all that content in, keep it on separate pages, give them the option to read more if they want.
Your pricing structure suffers from similar problems. I could also mention that your prices are generally quite expensive but thats your choice.

The logo does look cool, but might be a little bit unprofessional for a company site.
Search bar looks a bit lonely on its own, either take it out (it isnt really needed) or put something in that left hand bar with it.
Use CSS to make those links look a little bit cooler and to add a little more interactivity.
The footer looks lob sided as it's centered to the entire page instead of the content, stick it in a table the same width as the content table and center it.
Not too keen on the "Knight-Sites.co.uk - Home Page" bit in grey, looks a bit odd and isnt really needed.
Menu bar could do with being rollovers of some kind and to be stand out a bit more, the text isnt very clear on a similar colour background.
Like the use of the W3C logo, looks nice and professional (might have to steal that idea off you :D).
One last thing, offer some packages rather than everything seperate. By all means leave the seperate options on, but a lot of people wouldn't understand some of the stuff you mention, so it's worth adding some simple packages too.
