Has anyone ever noticed how badly teachers puncutate their work? When we're copying down work from the board, they never put commas in their work. Maybe it's just me (that I put commas wherever neccassary), but it just looks odd to me. I find myself putting the commas in, because it just doesn't seem right without a comma in.

They're probably right actually, but unfortunately the English are rubbish at grammar and so we put comma's etc. in all the wrong places. We have a load of foreign students on my course at Uni, and they always correct all of our grammar when we do team projects. This is because their languages are all structured, whereas English is not. So your teacher is probably correct and you just put too many commas in!
