Top of the list is F1 World Grand Prix 2. I got this game back in August 2000. I played over and over again racing in championships beating my previuos scores until I reached Champion. Then I realised this game is nearly impossible by this time it was around Christmas. I decided to try it without damage on becuase it was so impossible. I eventually won after 4 seasons of trying. Eventually I plucked up the courage to try Champion with damage on and just after a year of having the game I finally did it.
The feeling of driving is so amazing you feel like your driving an F1 car. The speed is incredible and after a while you know how to take corners at ridiculously high speeds, on the edge of spinning of and ruining your race. I paid 14.99 and I got a year of high-speed fun, I don't believe how much this game has been overlooked.
Second is Excitebike 64, check out my review to see why this game would be a classic if more people knew about it.
Third is Turok Rage Wars. Ignore the 1 player the multiplayer is excellent. A true 3d 1st person shoot-em-up. You will play for hours just playing with other people trying to kill them. People have ignored it due to Goldeneye but as a multiplayer game it is far far superior.
If you think any other N64 games deserve more credit post your reasons here.

I won GAD because of Excitebike 64. I can't understand why it doesn't seem to have ever reached the top five of the N64 game charts.
I have played Goldeneye but it isn't as good in multiplayer as Rage Wars. I use Goldeneye style controls in Rage Wars so I don't have to fiddle about with the C buttons. I found the Goldeneye single player boring after a while and the multiplayer cannot be enjoyed on your own.
Also, how can you say that Mario Kart is better on the SNES??? Ok, the tracks were more original, but the multiplayer/battle-mode is fantastic!!

IT was 4 players, it didn't come close to Perfect Darks multiplayer but I still thought it was good, controls are a bit iffy but when you get used to them its just good stupidly powerful weapon fun.
