While it's true that Walt Disney films are mostly old fairy tales, there is only an element on truth to your second point. Most of the Grim's fairy tales (which include Red Riding Hood and Cinderella among many others) were old folk tales which the Grim brothers collected and made much more suitable for a young audience. They were originally made up to warn children of danger and teach them about life.
Red Riding hood is the easiest one to figure out, although in today's world the content would be a little uneasy to explain in a family forum, which is strange when you consider that we are supposed to be in a much more liberated society today. Needless to say that it's all about the red part and the growth of young girls, plus, of course, the dangers of lust.

Did you know, well so I was once told, that Walt Disney has ever created one original film? The rest all all generated from previous stories and then turned into beautiful fairy tales when they used to be something a lot more sinister.
