Well if not then do it (as long as your stereo can take audio in-out) it sounds excellent, some how it just makes the game seem better having excellent sound quality and a good bass.
Its really simple to do and it sounds very good, although the sound In and out on the Xbox scart lead are not very long, so unless you have a spare stereo which you can put near it and use just for the xbox then you may want to buy a long lead.
But it is worth it.
Virtual Dolby is BS. The speakers are angled to give the effect that sounds are coming from all around. Dolby Digital systems have speaker to speaker transfers and a much wider range of frequencys for different pitches of sound.

Well yer i have it on my t.v.
But i also have a Big sub wired up to my stereo.

Yes but i have a very good expencive sony stereo with huge big powerfull speakers, so it sounds very good.
Worth the upgrade as you can enjoy DVD's with the surround as well.
For Dolby Digital you will need to wire it up via the Optical output socket on the Advanced Scart. Simple to do once you get your head around it and it makes a massive difference to the audio in games.

I have a Dolby Digigtal/DTS surround sound system and yes its the bees knees. One of the best decisions I have ever made was getting this system.
