I liked Toad's winning theme - it sounded like background music in The Shoe People.
Super Mario Kart on the SNES was one of my first experiences of gaming, and I loved it. The game had enough to do in Single Player, and was especially tops in multiplayer. And I loved the songs each character had after they won a race - Bowser's and DK Jr's were the best.
Mario Kart 64 was great, also. I've explained why a little further down this thread, and I can't be bothered doing so again, so if you're looking for reasons for my liking of this game, scroll down a bit. :-D
Super Circuit, although half of it was a revamp of the aforementioned SNES version, it had loads of new tracks, and looked a lot fresher than the console version. I've spent many a day perfecting my lap times on it, and it's easily my most played Game Boy Advance game overall.
Anyone doubting Double Dash!! shouldn't - the Mario Kart series will be as strong as it always has been.
However, I did prefer the N64 version - except for its lack of Koopa Troopa!
I didn't mean to say Mario Kart 64 was a c*ck-up, just a little too flawed for such a great franchise; as a follow-up to Super Mario Kart, it wasn't exactly icredible. The same goes for Super Circuit. However, they're still both very good games; in a nutshell, I pretty much agree with AJ.
