It certainly is an interesting game, and one I'm currently addicted to, but make no mistake it's flaws are many and it has not yet reached it's full potential. I can like it though, because I'm playing it for free, I certainly would think twice if I had to pay the monthly subscription though.
I got into it easy enough, no harder than any other RPG.
Hell, my brother got into it, so it isn't that inaccessible!
And Jedi Knight 2 is just plain!
If you're after action or brilliant sub-quests, then you'd be better off playing Ocarina of Time on the Zelda: Collectors Edition disc.

For GameCube, Rebel Strike is the best option. The fact that it is spoiled by some sub-standard on foot levels is redeemed in that the developers have included a entire co-op version of Rogue Leader. But, considering you don't want a flying game, then Jedi Knight II is the best option. Great lightsabre dynamics, brilliant force powers, an engrossing and huge single player and an addictive multiplayer mode. There are troubles with the framerate and level design in places but it doesn't take much to look past this. Two very good games. You'd best avoid all the others, mind.
Now, you mentioned Knights of the Old Republic, suggesting you have an Xbox or PC. If so, and if you don't already have the game, then get it. Bioware have managed to create an excellently structured world, with a huge number of fun sub-quests, a real sense of freedom and an epic and branching storyline. A great RPG. Also, if you decide to go for Jedi Knight II, it'd be best to get it on the Xbox/PC - just for the better presentation and distinct reduction of slowdown. Also available is it's sequel, Jedi Academy, which is much improved. The ability to use dual and double-bladed lightsabres, plus much more acrobatical scope adds a whole new depth to a gameplay. A really fun game.
KOTOR is the best SW game ever.
