Why do most developers just not bother trying for the PS2?

No, there is nothing wrong with ps2 conversions specifically, all conversions are crap, I've seen a lot of PS2--->PC conversions that completely subbotaged the game, the ones that are wrthy to mention are FF8 and mgs2 substance, you see, the developers make the game for a specific console and they put a lot of hard work in it, and when it succeeds they would want to make more money, but they don't do as much work on the conversions, they just think about the money, so it ends up being full of glitches and bugs, frame rate problems, etc.. it's vey rare when a conversion turns out to be good, a good conversion from a ps2 game that I can remember is GTA Vice City, also a good conversion to the ps2 was Splinter Cell which isn't exactly the same as the Xbox version, the graphics offcourse are less, but I remember that opsm2 mentioned some add ons.
Apart from a choppy framrate that wasn't so hard to get used to, the scaled down and more accessable inventory system actually adapted the game to a console style, making it as playable as it was on the PC.
I think perhaps the major failing with PC to console conversions is that many people don't think to alter the game in any other way than for the new hardware, whereas sometimes the gameplay needs tweaking to correspond with the new platform.

lol they really don't work on consoles. they are far more easy to work and useful on a pc. get a link up cable to the tv if you want a bigger picture.

i think it's a one way street. unless you intend for a game to be on more than one console, it's hard to match the making of it on one console to another. each different console has different capabilities and a different way of making the data.
i'm pretty sure that it's easier to make a ps2 game to pc rather than vice versa.
