A few bits I like:
Barber's Adagio for strings
Faure (sp?) - Pavane
Andrea Bocelli - Con Te Partiro (amazing vocals, and reminds me of Sopranos)
Duetto Sul'Aria from Marriage of Figaro (thanks tnc and Timmargh)
and some other stuff I can't really think of now at work.
Anyone have any other recommendations? Don't be shy, they can be from adverts and films too :)

The funk version by Deodato has also got to be heard to be believed.

Beethoven - Symphony no.6 - the pastoral symphony
vivaldi - the 4 seasons (particularly the "spring" movement)
Parents took me to a Royal Tournament as a kid. The band played, the horses raced, and the cannons fired... left a hell of a lasting impression.
