Tales of Symphonia fits that exactly.
After, you can get Skies of Arcadia, Paper Mario 2 and next year Baten Kaitos.
Metroid Prime 2 for thrill, excitement, tension, exploration and challenge
Mario Kart DD for multiplayer excellence.
And if you wan't to bash things, then Donkey Konga is probably one of the best, if not THE best multiplayer cube game
Wario Ware is also simple addictive genius.
Obviously Zelda if you want a superbly playable and enjoyable game that you'll never forget, and Mario if you want some top quality platforming.

That's all I have though, as I just recently got a GC again. However I'd also recommend Ikaruga if you think you can handle it.
