I've never really found it the general feeling towards these two.

defoe by a mile, defoe is a genuinely quality striker, ok he still has to fill potential but he has that ability to make it all the way and be a regular 30 goal a season striker.
he is my favourite sort of striker, what is often refered to as a livewire. you don't get him living of the scraps round the goal like RVN, or just sprinting and poking them in from 2 yards like owen. He has a style that reminds me of hasselbaink, a bit of pace and most importantly always looks lively, if he lines up a 30 yarder you actually think there is a genuine chance he'll bang it home.
smith on the other hand is a good player, but by no means looks like becoming top notch. he is a hard worker and gets stuck in well, he just lacks something. he is often fairly anonymous and probably actually is better used wide out or in support, especially as his career goal return is prety unimpressive. still a good player but not elite
