What he did just before he died, including asking Luke to tell his sister that "you were right" and all that, should mean that he appears in spirit form as the Anakin we see right before he died. Instead we have Hayden Moronman, but I guess its excusable if they are allowed to choose what form they take.
Obi-wan would choose the form that Luke recognises, as would Yoda, which explains why they come back as older beings, where as Anakin might prefer Luke to see him as he once was, rather than the slightly darker version. This is the explanation I've chosen to accept, since it doesn't sit well with me if I just say that its a simple way to tie the prequels to the originals.
