PvP refers to Player Vs Player. Basically where players from each opposing side (in this case, the Alliance and Hoard) can fight each other.
PvE is Player Vs Environment. Essentially more co-op orientated, people group up and kill those monsters and creatures that are part of the environment, usually completing missions together or hunting through dungeons.

I'll definitely be playing too. I’ll be playing as one of the hoard though, non of the four races in the Alliance interest me.
I'll be going on a normal server, being ganked when im mid-way through a quest just doesnt appeal, furthermore, PvP flags permitting i can still fight Alliance people for The Horde!
I'll be playing..and looking for a guild..but I'm only going on a PVP server. None of the PVE only crap for me :P
