When there is no game in the xbox, go to 'memory' in the main memory. Providing the memory card is inserted, you should now be able to choose it to browse the contents. Once in here, you can somehow copy to HD.

I'm sorry I can't be more specific, I've only done it once and that was quite a while ago.

How to save memory card to memory card on xbox

You will need:

1 x Mixing bowl
2 x memory cards
1 x rolling pin
350g of baking soda
A backing tray.

Put the xbox in the mixing bowl and mangle slightly with the rolling pin

Put 1 memory card in the bowl and shout "Copy copy copy" whilst bashing it wil the rolling pin.

Quickly add the baking soda and remaining memory card whilst chanting "Microsoft, is my friend, la la la la la Bill Gates" over and over again.

Mangle some more with the rolling pin.

Transfer to a backing tray and cook for 35-40 minutes at 280 degrees, or gas mark 5.

I would imagine you'd have to copy from one memory card to the HD, then to the second memory card.
