Can I use Simms and Dimms at the same time, or does it depend on my motherboard???

I have 2 spare Dimm sockets, and I've already filled up my 4 Simm sockets with 2 pairs of SimmRam.

Yeah sure you can if you have the slots. But remember that SIMMS run at 66MHz, so you DIMMS will have to as well. This will probably be set in the BIOS. It's also worth remembering this when buying the DIMMS (no point splashing out that little extra for 133MHz DIMMS). It is likely you can only find 100MHz or faster, but don't worry since they should be able to run at 66MHz anyway.
