I always thought it started when the Jews refused to capitulate to the Roman Empire, who demanded that the Jews also observe the Roman gods. This lead to the Roman army destroying the rebels (actually, thousands of them committed mass suicide in a mountain fort) and completely annexed and pushed out the Jews from what is now Isreal.
Though you can trace it back to the Babylonian and Assyrian empires, that was more to do with political/resource expansion rather than religion and alliegence.
