Aye, just keep out the way until all the bombs appear, then get him to charge you so he eats on of the bombs - it's pretty tricky getting the timing and distances right at first, but you'll get it in the end.
The slow down and zoom in and attack the bomb for some major damage.
Repeat 'til death.

The shark one? If I remember correctly, dodge his attacks and when he has explosives in his mouth (or something, can't remember what) slow down time and begin to kick his head in. The explosion slowed down will cause lots of damage.
