It's tax season in the US and I work as a seasonal tax preparer until the 15th of April, when Uncle Sam slams his annual ax down on all tax liability. Do people in the UK have to file their taxes every year too? How does that work?

Well, that sounds easy enough. US employees pay taxes through payroll every month too.. but, they still need to submit an annual tax return by April 15th to reconcile their taxes paid through the year against the total imposed tax liability by the government. If people overpaid during the year, they get a refund.. otherwise, they have to pay the difference.

Most people who are employed in the UK have their tax filed for them by their employer(s) using a system known as 'Pay As You Earn'
I believe those whoi have additional incomes still have to file a tax return though.
