How can you miss out Tribute by Tenacious D?
I've somehow always preferred the accoustic version of Everlong by the Foo Fighters. It's one of my favorites, but I haven't seen a video of David Grohl strumming it yet though.
Weapon of Choice by Fat Boy Slim is another good one.
