I have created several sites using InstantSite Pro and am just about to start a new one for a friend.
They have 6 side menus, each consisting of either basic text or imagery. They also want one side menu that has about 6 drop down menus that will then take the user to a new page. Is this possible using this service?

Unfortunately this is not possible at the moment. We are considering introducing different forms of navigation, such as drop down menus in the future though.
