Heres how it would work, along with some other ideas of playground games updated for the, eh 'masses in vehicles'.
Hide and Seek.
Played like the traditional game, except, like the advert, its in cars, and each participant has a certain marker for itself. They go and hide, and the finder car has to find all of them. An in-car radio system would allow the usual 'So and so, I see you!' etc.
40-40
My personal favourite. All but one player drives off, and then has to make it back to a certain point, to win the game (say the top of a multistory carpark) If they are spotted they have to go to the 'base' and wait. If anoyther player gets in, and manages to 'touch' the base (by jumping out their car and running to a point) all the players are free. This kind of game could last for a long time, and I always enjoy it! It stricky too, as you have to watch out for sneaky little drive ins and laybys where cars can wait to sneak past the searcher, and go back to the 'base'.
'Hit'
You know the rules for this one. But you don't hit with cars - that would be stupid (!) Instead, you have to hit the opposing car with a water pistol, and then drive away very very fast to avoid a similar retribution.
Capture the Flag
Okay, not a playground fav, but certainly a UT one. You are on a team, and in your little cars, have to drive to the opposing base, and nab their flag. Again, water pistols (operated by the passenger of course!) would mean you'd have to drop the 'flag', and then it would be returned by an opposing member. First to 3 wins!
Cops and Robbers
Similar to 40 40, but a mix of hit too. Two teams in cars, the usual water pistols, and two bases. One team are the 'cops' out to catch the robbers, who must free their comrades from jail (any shop looting is optional and not reccomended)
So, these ideas may not be at all feasible, they are dangerous, costly, damaging to the environment, and may be more suited perhaps to a network of country lanes and fields. But it would be so fun!
