Also depends on whether your company uses proxy servers, dhcp servers or any other web servers to access the outside world. I've worked in places where although the client pc's access the web through the local server, that server is connected to a domain controller that in turn makes the request through the web server for the wan. Therefore you'll need to clear the logs on there too. Basically (and i suppose obviously) the bigger the network the more footprints you leave.

But if, as you say, its a small network with one server you should be ok. Having said that, I've also known people who have been let go from their job for accessing non-work related sites, so it depends on the company too.

Ok, so what program are/is your company using to monitor web access?

Do you know the administrator password, if your do then your laughing because it's stored away most likely in the directory where it was installed to,

ie C:\Program Files\????????? replace with name of program and then look in there for the log files and just delete them!
