Firstly, the huge PC and Dreamcast hit Half-Life has been confirmed for PS2. It will ship sometime next year, probably in summer/autumn time. It is being made by Gearbox Studios, the people behind Half-Life for Dreamcast.The PS2 version will include cooperative, deathmatch and multiplayer options, new characters levels and weapons. Gearbox has called the version as the most advanced one yet.
Another one is the sequel to the popular Theme Park- Theme Park 2001. I haven't heard much about this but it is being realesed in Japan this December.
Remember Ape Escape?? It was one of the best platformers on PSX. There will be a sequel to this on PS2, in Japan it will be called "The Game Of Piposaru, and it is released in Japan in Spring 2001. Like its prequel, it will be called something different over here. Ape Escape in Japan was called "Sarugetchy".
Capcom Japan announced Devil May Cry, a new action game for the PlayStation 2. The game was originally designed as an extension of the Biohazard (Resident Evil) universe, but has developed into a completely original game. Devil May Cry will be released in Q2 2001. US and European releases are scheduled for Christmas 2001.
One more is Ready To Rumble Boxing 2. Of course, there are LOADS more games scheduled for 2001, but these are just some to look forward to.

The only problem is that Sony are cutting back on their stock allocation for the first releases. My friend's shop was due to get about 150 games altogether (multiple copies of the same game, obviously) but has had this cut to 60-70 now, and most other shops seem to have had the same message. Hope Sony know what they're doing, until then I'll stick with my Dreamcast and Shenmue over christmas.
